Immich: change Upload and/or Library location

I’d like to change the upload and library folder locations to an external hard drive, temporarily. Later this year, I will be moving my server and adding a NAS, and will need to update the folder again. What is the most stable way to do so that persists across reboots, updates, etc?

I found a few posts about this, but nothing that felt like a full, concrete answer. This one mentions environment variables (which reset upon update, so I’m not doing that) and bind mounts (but the instructions are confusing and feel incomplete).

Hi again, I am really struggling with this. I cannot figure out bind mounts, and I apologize in advance if I’m missing something obvious. I have /data/immich on my proxmox server as part of my ZFS pool. I am able to mount it (mount [ip]:/data/immich /mnt/immich) in the Yunohost LXC successfully. I then am trying to create a bind mount to point to /mnt/immich (mount --bind /mnt/immich /home/yunohost.app/immich) but I can’t seem to wrap my head around if this is correct or not. With the issues I was experiencing getting this set up, I just ended up installing Immich directly on my NAS, and putting the machine-learning module on a separate, local, server with more power. The YunoHost server has a Redirect app I use to reverse-proxy to the NAS. And I use a secondary Redirect app to give myself a convenient shortcut from the portal.
