Is it possible to install WordPress on multiple domains, for example, one on alpha.com and one on beta.com, without enabling the multi-site option? Because multi-site is only for sub-domains and sub-directories.

Hello, yes this is possible without any issue. Their names will be wordpress__1 et wordpress__2. I already did it.
I think you can even install several instances on the same domain with different paths
And activating multi site is not mandatory

If it’s disabled and you don’t plan to use it, you can safely remove it. And if you eventually need it, you can download it again
