I have been trying to find documentation how to set up a catch all email address but couldn’t find any.

Can someone please point me to the right direction?

there is no official way, but this thread might be helpful : Yunohost Catch-All mail address

Be careful to have backups before making any change ! This is an unsupported path.

If anyone is searching the internet how to set up a catch all email with YunoHost, the easiest way is to do it with Postfix
