My question is simple : how can I change the default font of my nextcloud ?

Indeed, for quite some time now my nextcloud web interface has been using the font visible in the following screenshot.

I haven’t found a lot of information on fonts and nextcloud other than it would be OS related.

I think you are using the OpenDyslexic font.
You can deactivate it under settings → accessibility
