Ok. So there was a previous installation. Does ls -la /var/log/jitsi/jitsi-videobridge.log return something ?
You may have to change /var/log/jitsi ownership
chown -R jitsi:jitsi /var/log/jitsi/
or to remove it before retrying the installation.
