Is there a guide to installing applications that aren’t part of the Yunohost app catalog? I’ve been looking for something like that, because I don’t want to mess up my server, and at the same time I’m interested in installing, say, Restyaboard (which can be installed with docker).

For docker purpose, you should try with the docker_ynh app i think.
And generally, if you want to install an app manually, you can do it like for a classic debian (not ubuntu). You might need to modify /etc/ssowat/ssowat.conf.persistent
In some situation: my_webapp_ynh, redirect_ynh and docker_ynh are very usefull.
